I have multiple companies set up on a three user network. To simplify things and minimize mistakes, I would like to set up different defaults for different companies. For example, I would like each company to have a different color scheme, different default screens for invoicing, and different default invoices to print for each company. Can this be done in Peachtree? and how can I do it?

One way of doing so is to manipulate the pcw90.ini located under the c:\windows or c:\winnt directory. As this file stores the default global information of Peachtree, you may save different copies with different settings. Then, create a shortcut to a batch file that change the pcw90.ini you use for each company like:
Sample batch:
copy c:\windows\pcw90.001 pcw90.ini /y
c:\peachw\peachw.exe
where pcw90.001 is a copy of pcw90.ini with different settings. Everytime instead of clicking the Peachtree icon, click the icon you create to this batch file.
You may share a same copy for all users over a network, just change the source directory you copy from. Of course, this is just an example, you can improve the batch file yourself.
