Using Version 8.0, when I set user rights to just "add and read" for sales invoices, my users are still able to go to prior invoices and edit their details.

Would anyone have any idea why they are not being prevented from editing a sales invoice?

With Add and Read rights, they should be able to pull up an existing invoice and edit it, but it shouldn't save. Check your user settings again and make sure the user is logged in under the correct user name.
