Should I expect any problems with data restoration if I upgrade from Peachtree 7.0 to 2003.

You shouldn't have any problems, but you must always prepare just in case. Back up your data first, make sure that you have your version 7 CD handy in case you need to reinstall that version if you encounter problems, then have a go at 2003.
Keep in mind that once you install the software, the conversion could take a while, as it has to convert your data to version 8, then 9, then 10 (2003). A good plan is to start it at the end of the day and let it run unattended after you see that the conversion process is successfully underway.

Don't upgrade! Install 2003 along side of V7 in a separate folder. Then copy your company folder from V7 to 2003 and convert it there. That way you can continue to use V7 for production while testing out 2003 to be sure there are no problems. Once you are convinced that 2003 is solid, copy your latest company data again, convert it, and you are ready to rock and roll.

when upgrading v7 to 2003, will the files (backup) increase in size?
ie v6 to v7 doubled...

Backups increased from version 6 to 7 because 7 introduced a new file called sortjob.dat, which basically replicates all of your Peachtree data in order to speed up reports. I'm not aware of any significant changes in backup file sizes subsequent to version 7.
