missed sales tax

sales occurred without collecting taxes. some customers had no entry in "sales tax" field in customer defaults. I can estimate but how do I correct accounting records ? How about a detective control and a preventative control?

I made a quick EXCEL spreadsheet that I use to report sales tax. It allows me to look at every invoice to see the tax collected and calculates the tax that should have been withheld. Very simple export from a modified "Invoice Register" report.
