Any suggestions on doing lay a ways?

Here is an idea, but not sure if it will work. You could record the lay-away as a quote or sales order (that way it does not relieve inventory). Then when each payment is made, record it as a prepayment til the lay-away is paid off. If you are afraid of running low on the item(s) that are put on lay-away, you could following the same steps but add an inventory account for lay-aways and use the inventory adjustment to place the items into that account. When the lay-away is paid off, convert the sales order to an invoice and reverse the inventory adjustment to place the item(s) back in inventory.
